Carob

The carob is a pod of about twenty centimeters long, which contains 10 to 20 edible seeds: the carob seeds.
This pod belongs to the legume family or fabaceae, just like lentils, red beans and chickpeas. The carob tree is an imposing tree, which can measure up to 15 meters high and live up to 5 centuries! It is fond of hot and dry regions, tropical or Mediterranean. Carob pulp is rich in starch (35%) and sugars (40%) and is an interesting source of protein (7%). The carbohydrates of carob are mainly sucrose and glucose.. Carob seeds are also a very good source of soluble and insoluble fibers, useful to regulate the transit. Finally, they contain minerals (calcium, iron, magnesium, phosphorus), vitamins (B3, A and E) and tannins. The carob gum contains galactomannan, a polysaccharide which gives it its gum texture and is responsible for part of its health benefits. At daintree we primalary focus on ensuring the right quality of Thick Carob from our medetrian region Cap-bon that provides a pulp with a high sugar content and low fiber content.
